Monkey, You got it... an end to one thing and a new begining all at once. I checked your name before replying, what was that about western medicine deeming you crazy? I felt the same way during the several years I spent so sick before I was diagnosed with celiac. Anyway, I am tying so hard to get up and running. I plan to have a website and hope to be able to fill orders. I feel like this has to be done now. This is a ground floor opportunity! I know I can do it. One day soon I will have a questionaire developed for celaic patients. Would you be willing to participate?

Wow I hardly know where to begin. Celiac is a huge disease in this country. You are a baker. This does not end your career. It begins it. Being able to cook with potato, rice and other flours is going to be a huge art. They are hard to cook with and will take a creative genius to figure it out. Lots of trial and error. Nothing fluffs like wheat except maybe tapioca. I wish you the best and long to buy your product. Danielle

Thanks Suzi. I started small, looking for a support group in my area (there isn't one). Then I found a ROCK (Raising Our Celiac Kids) meeting not too far away. I have so much ground to cover! If you have any more advice, please don't hold back.

I would contact your local celiac society and get them on board. There is quite a big celiac community out there and they should be able to assist you with the government and suppliers. Josie, Thanks! I've been so busy, I've only just got your note. Any help at all would be great. I am putting together a questionaire for some of the local restaurants, especially those that are already offering gluten free options. I've made a lot of progress, but I am still in the early stages of putting this together... business plan research and writing. I'll keep an eye out for your response. Thanks again.

You seem to have the right idea. I have spent the last six months trying to get people interested in the problems caeliacs face. I did have a breakthrough this week. A local pub- one in a large chain- have listened to my suggestions and are now acting. They are going to try and start a glusten free section in their menu.

I've never been diagnosed. I have symptoms though, and feel better when I don't eat wheat,and get really sick when I do. I try to have the whole family avoid wheat. Society isn't very compassionate about dietary requirements.

Fanci, Thanks for the feedback. I will need mostly grants and loans to start up the business. As a result, I need to draft a business plan that shows my proposal has a good chance of success. Would you mind anwering a few questions I can add to my poll? Most importantly I need to show that I can't use shared space, I need a location of my own due to cross-contamination issues. By the way, have you passed on the celiac to any of your children? I did. She is just now, at four and a half and a lifelong gf diet, begun to feel "different".

I wish you the bst of luck. I wish there was something like that in our area. The whole foods stores and a few of the grocery stores carry gf foods, but it would be so nice to be able to get donuts on Saturday mornings!
